Roast Veggie Pie

Often when cooking, particularly baking, you can end up with leftover ingredients. There is no need to throw these extras out, be creative and find another meal for them.

Recently I made a layered veggie bake and completely overestimated the amount of vegetables that would fit in the baking dish. Consequently I had leftovers. There was no waste through because I decided to make a pie. (more…)

5 Layer Vegetable Bake

Vegetable bake is tasty, easy to make and you can use whatever vegetables are on hand or in season. When I first moved out of home, my mum popped by one day to drop of a vegetable bake. I was happy – free food and a baking dish (I still haven’t returned it!).

Finger lime & cranberry salad

My friend Sol and I hit the local farmers market a few weeks ago where we found finger limes to be in season. Unfortunately, I completely forgot I had bought them. luckily and despite the iffy outer skin, the little burst of lime in the middle were still juicy and delicious. I used them in an amazing brown rice salad with feta, cranberries, sweet potatoes, baby spinach and slivered almonds. (more…)

Healthy Hearty Veggie Soup

Winter means soup. As a child my mum use to spend the weekend making big batches of soup. She spent days making her own chicken and ham hock stocks and kept us warm during the cold winter months.

This vegetable soup on the other hand only takes 30 minutes to cook and will fill you nutrients. Perfect to keep a cold at bay or to recover from too much partying! (more…)

Veggie sausage rolls

Pastry in winter is amazing. Technically, it isn’t winter yet, but it sure feels like it in Canberra. The cold weather, leftover pastry (my housemate made quiche) and lots of veggies, some of which really needed to be used, was the inspiration for making Veggie Sausage Rolls. (more…)
