Chocolate Mochi

My friend Sol and I recently made mochi for the first time, we had intended just to make green tea and anko mochi (sweetened red bean paste), but part way through we thought chocolate mochi sounded like a good idea too. It was! This post is about making chocolate mochi. Yum!

01 cocoaTo make chocolate mochi you will need 150 grams of sweetened red bean paste, 1 cup sweet rice flour (mochiko), ¾ cup water, ¼ cup sugar, ½ cup corn flour, 2 teaspoons cocoa.

Ingredients: 150g sweetened red bean paste, 1C sweet rice flour, ¾ C water, ¼ C sugar, ½ C corn flour, 2T cocoa

Equipment: Chopping board and knife, bowl, oven tray, greaseproof paper

Steps: Cut red bean paste into 1cm cubes, roll into balls and freeze. Mix rice flour, cocoa, water and sugar in a bowl. Microwave rice flour mix for 2 minutes (or preferably steam in a bowl for 20 minutes). Turn out on to a cornflour covered oven tray, and sprinkle with more cornflour. Pull off approximately 2 tablespoons and roll into a ball, flatten and place a ball of red bean paste in the centre. Pinch the mochi to cover and place on greaseproof paper.

02 making mochiOutcome: Yum! Chocolate mochi is tasty. Steaming, rather than microwaving, the dough would have improved the texture.
