Green beans are not my favourite veggie. Being force to eat overcooked microwaved beans as a child was not a great start to the relationship.
Green beans with garlic and butter (or oil if vegan) on the other hand are delicious. But then again what isn’t better with butter and garlic? Icecream, and I’m glad I’ve never tried it!
Garlic green beans are super easy to make. Start by top and tailing the beans, i.e. removing the ends off each bean, and finely chopping some garlic.
On this occasion I was cooking dinner for friends and served the beans hot as a side dish to accompany a delicious veggie roulade made of wilted spinach, grilled eggplant and roasted pumpkin. I also served cauliflower bake and mini stuffed potatoes.
Equipment: chopping board, knife, frypan
- Prep: top & tail the beans and finely chop the garlic
- Cooking: Add a knob of butter (or tablespoon of oil) and the beans to a hot frypan, when the beans are nearly cooked add the garlic and salt.
