When one accidently forgets the cauliflower in the fridge and buys another there are two options, 1 – roasted cauliflower with cumin and 2 – cauliflower bake. This time I opted to make cauliflower bake.
To make this dish you will need cauliflower, white (or béchamel) sauce and cheese.
Start by making the white sauce. Melt 40g of butter in a saucepan, add 40g of flour and a pinch of salt, cook for 1 to 2 minutes. Add 2 cups of milk and whisk until the mixture is lump free and thickens.
Lazy person tip: Use a stick blender to get your white sauce lump free.Next, prepare the cauliflower. I used half of a large cauliflower in this bake and opted for the lazy preparation method of using the microwave.
Break off the cauliflower florets and place on a plate with a tablespoon of water. Cover the plate with cling film (cling wrap, glad wrap whatever your preferred term is) and microwave at 70% for five minutes. You are aiming for somewhere between par-cooked and al dente. Obliviously, if you’re making a smaller batch it won’t take as long to cook.
Great some cheese and then you are ready to assemble. Put a layer of cauliflower in an ovenproof dish, cover with white sauce and top with cheese. Bake at 180 degrees Celsius until the cheese is golden.
