Grilled Eggplant

Grilled eggplant is delicious and so versatile – pizza, pasta, burgers, as an ingredient in baba ghanoush, or on its own as a snack. I had two dubious looking eggplants in my fridge needing to be used so I turned them into grilled eggplant.

Grilling eggplant properly should involve slicing, salting, rinsing and grilling on a BBQ. I was feeling lazy and so did mine in two steps.

First, slice the eggplant.

DSC00230Second, arrange the slices in a sandwich press, apply a generous sprinkle of salt and shut the lid until cooked.

This batch of grilled eggplant was enjoyed with Easy Hummus, and a couple of pasta dishes.

Ingredients: eggplant, salt

Equipment: chopping board, knife, sandwich press


  1. Slice the eggplant
  2. Place in sandwich press, salt and grill until cooked
