Veggie Slice

I’m not really one for big daytime meals, especially at work. I am much more of a snacker. Whilst I try to create snacks that are tasty and healthy, I am usually inspired to cook snacks less by this and more by the need to use up excess vegetable or fruit in my kitchen. In this case it was sweet potato..

Initially I had wanted to make impossible sweet potato pie to use up the less than peak condition sweet potato. Impossible pie is a pie that forms a crust as it bakes – pastry for lazy people!

I got distracted and instead found a recipe for sweet potato and zucchini squares. They looked simple, healthy and tasty, and more importantly, I had all the ingredients.

I gathered the ingredients – carrot, zucchini, sweet potato, spring onion, mixed herbs, vegetable stock, garlic, eggs, flour and grated parmesan cheese.

P1040575And the equipment – bowl, chopping board, peeler, oven tray and grater.

P1040576 Grate the vegetables and combine all ingredients in the bowl.

P1040579 Spread the mixture evenly in the oven tray.

Bake in the oven at 180 degree Celcius for 30 minutes. Turn off the oven and leave the slice in the oven for a further 15 minutes.

P1040581Remove the veggie slice and cool.

The Outcome: Delicious! What I love about this slice is how much you can vary it. You might like to try using pumpkin or potato as alternative veggies. You could add corn for little bites of sweetness, or swap the mixed herbs for dill and chives.

Ingredients: Carrot, sweet potato, zucchini, mixed herbs, vegetable stock, garlic, spring onion, salt, egg, flour and parmesan cheese.

Equipment: bowl, chopping board, peeler, oven tray and grater

Steps:

  1. Grate the veggies
  2. Combine all ingredients in the bowl
