Having friends around for a cooking session is a great way to try new dishes, or twists on old favourites. This was certainly true when my friends came over recently to cook pizzas. Sol made a delicious rocket and tomato pizza.
Pizzas are a great option for cooking sessions with friends. Everyone can get involved in the preparation, they don’t take long to cook and you get to eat throughout the evening.
The way we organised our pizza night was simple – I made the pizza bases and my friends brought ingredients to put on top.
Sol, like me, thinks that less is more when it comes to pizza toppings. His contribution to pizza night was a simple tomato and rocket pizza with fresh mozzarella.
I like to put rocket on pizza, but usually I put it on top once the pizza is cooked, for example my eggplant, blue cheese and rocket pizza. Sol, on the other hand, added the rocket as one of the first ingredients and it was cooked as the pizza baked. The pepperiness of the rocket is much more subtle cooked than raw.
The outcome: Sol’s pizza was delicious and you could really taste every ingredient.
Ingredients: Pizza base, tomato paste, rocket, grape tomatoes, fresh mozzarella, shredded mozzarella and basil
Equipment: Chopping board, knife, oven tray oven
- Spread tomato paste and shredded mozzarella on the pizza base
- Evenly spread the other ingredients on to the pizza base
- Cook at 170 degrees Celsius until golden
