I am a big fan of salads. They are easy to make, fresh, healthy and there are endless possibilities.
Recently I was making a side salad to go with roasted field mushrooms. The salad was a bit of an after thought and so I had to make do with the limited ingredients available at my friend’s house.
Personally, I am a big fan of putting fruit and cheese in salad. The sweetness of the fruit compliments the savoury lettuce and the saltiness of the cheese. Crunchy fruits like apple and pear also add a different texture to the salad.
On this particular occasion my friend had one apple, some passable mixed lettuce leaves and a whole lot of cheese, I opted for the creamy blue.
The outcome: The salad was very tasty, but I made it too early in the dinner preparation and we had eaten most of the blue cheese pieces by the time the main was ready.
Next time: Walnuts would’ve been a delicious addition in this salad.
Ingredients: mixed lettuce leaves, creamy blue cheese, apple, olive oil
Equipment: chopping board, knife, bowl
- Wash the lettuce, slice the apple and crumble the blue cheese, combine in bowl
- Drizzle olive oil prior to serving
